Parfait with coconut yogurt, cinnamon, ground flax seed, maple chia pudding, strawberries, blueberries & chocolate buckwheat granola

Chocolate Buckwheat Granola

DIRECTIONS:
Mix all ingredients for granola except the chia egg. Combine chia seeds with water, let sit for 5 minutes, then combine in with the granola ingredients. Mix well.

Blend together 6 dates (that have been soaked in hot water for 5-10 minutes) with almond milk, and ground flax seeds. In a pot, heat coconut oil until melted, mix together chia seeds and chocolate mixture from blender. Mix wet ingredients with dry ingredients. Make sure everything is coated!

Cook for 35 minutes at 350 degrees F. Stir granola every 8 minutes. Enjoy with almond milk as cereal, or mixed into a parfait! Keep in an air tight container in the fridge for up to a week.

Trail Mix (mix with nuts and keep)

INGREDIENTS:

Granola:
2 cups rolled oats
2 cups steel cut oats
1/2 cup pumpkin seeds
1 cup slivered almonds
1 cup washed and rinsed buckwheat
1 cup shredded coconut
1 tbsp cinnamon
1 tsp pink salt
1/4 cup melted coconut oil
1/4 cup maple syrup
chia egg: 1/4 cup chia + 1/4 cup water

Chocolate Coating:
6 dates
2 cups almond milk
2 tbsp ground flax
1/2 cup coconut oil
1/2 cup chia seeds
5 tbsp cacao powder

Adaptogen Powered Pancakes

INGREDIENTS:
2 bananas
2 cups almond milk
3 cups oats
1 tbsp chia seeds
1 tbsp ground flax seeds
1 tsp cinnamon
1 tsp adaptogen blend (I use Four Sigmatic)
1 egg - optional
 

DIRECTIONS:
Add everything to a blender and blend for 1 minute. Let sit for 5 minutes to thicken. Apply to a heated skillet with coconut oil melted. Pour pancake batter, yields about 7 medium pancakes. Cook until brown on both sides. Be sure to poke the middle to see when they're done. They should be soft, but not gooey. Enjoy with my homemade raspberry chia jam, fruit, and a little but of maple syrup.
